Chilli Garlic Butter Pasta with Runner Beans, Sundried Tomatoes and Peppers

Chilli Garlic Pasta

Serves 2 – Approximately £2.48 per serving – (£4.95 Total)

Ingredients

  • 160g Pasta (Any) – (£0.25)
  • 150g Runner Beans – (£1.00)
  • 100g Sundried Tomatoes (£1.00)
  • 100g Roasted Red peppers (£1.00)
  • 50g Butter (£0.25)
  • 2 Garlic Cloves (£0.10)
  • 1 Tbs Olive Oil (£0.25)
  • 1 Tsp Chilli Flakes (£0.10)
  • 50g Parmesan (£1.00)

Method

1 – Add the Pasta to well salted cold water and bring to the boil, cook for 10-12 minutes. 4-5 Minutes until the end add the runner beans to the pasta pot.

2 – Whilst the pasta is cooking, melt the butter on a very low heat in a separate pan then add the garlic and simmer for 30 seconds.

3 – Add the Sundried Tomatoes, Peppers, Olive Oil, and Chilli Flakes to the Garlic Butter, cook for a minute then turn off the heat.

4 – Once the pasta and Runner beans are cooked drain and combine with the Garlic Butter sauce.

Serve topped with Parmesan and Black Pepper.
