Peanut Satay Tofu Stir Fry with Broccoli, Red Pepper, and Carrots

Peanut Satay Stir Fry

Serves 4 – Approximately £1.97 per serving – (£7.85 Total)

Ingredients

For the Sauce:

  • 120g Peanut Butter – (£1.00)
  • 400ml Coconut Milk – (£1.00)
  • 2 Tbs Red Curry Paste (£0.80)
  • 2 Tbs Honey (£0.30)
  • 2 Tbs Soy Sauce (£0.10)
  • 2 Garlic Cloves (Chopped small or grated) – (£0.10)
  • Pinch of Salt and Pepper

For the Stir Fry:

  • 250-300g Tofu (Cut into 1cm Cubes) – (£2.20)
  • 120g Tenderstem Broccoli (Cut into bite-size pieces) – (£1.50)
  • 1 Red Bell Pepper (Sliced into strips) – (£0.25)
  • 2 Medium Carrots (Chopped into small batons) – (£0.20)
  • 300g Basmati/White Rice – (£0.40)

Method

For the Sauce:

1 – Mix all of the ingredients together with 2 Tbs Water, adding more if needed.

For the Stir Fry:

1 – Add a generous amount of vegetable/sunflower oil to a pan and bring to a medium heat, add the tofu and fry until crispy (7-9 minutes). Once done remove the tofu from the pan into a bowl with some kitchen roll to soak up the excess oil.

2 – Add the Rice to a pan with 600ml water, cover, and bring to a boil for 12 minutes or until all of the water has evaporated and the rice is fluffy. Remove from the heat and keep covered until serving.

3 – Whilst the Rice is cooking, remove some of the oil in the pan so a drizzle’s worth is left and bring to a medium-high heat. Add the carrots and fry for 3 minutes stirring occasionally.

4 – Add the Broccoli and Red Pepper to the pan and fry off with the carrots for 6-8 minutes until they are charred slightly but still have a crunch.

5 – Add the sauce and fry off mixing it all together for 2 minutes. Add the Tofu and mix in, and serve over the rice.
